Thanks to the lentils, this hearty meal is a good source of protein and an excellent source of fibre.
1 tbsp vegetable oil
16 oz (450 g) boneless, skinless chicken breast, chopped into pieces
2 celery ribs, diced
1⁄2 red bell pepper, diced
1⁄4 cup dry red wine or nourish broth
1 can (14 oz/398 ml) lentils, drained and rinsed
- Heat Multipurpose Pot to medium; add vegetable oil and lightly brown chicken on all sides. Remove chicken with a slotted spoon and drain any excess oil from pot.
- Add celery, Toasted Onion, and red bell pepper. Stir and heat until aromatic. Return chicken to pot and sprinkle with Seasoning.
- Stir in prepared Nourish Broth and dry red wine if using. Bring to a simmer, reduce heat to low and gently simmer for approximately 20 minutes. Add canned lentils and heat until chicken is fully cooked. Season with Salt and Pepper.
